  • 1 pint cherry tomatoes
  • 2 tlbs ev olive oil
  • 3/4 cup lemon dill humus
  • 1/2 cup feta cheese
  • pesto sauce

    Steps for Completion
  1. Preheat the oven to 400°F.
  2. Slice the zucchini in half long ways and scoop out the seeds. Slice the tomatoes.
  3. Sprinkle olive oil, salt, pepper, and garlic powder on top of the sliced portion of zucchini. Toss tomatoes with olive oil, salt, pepper, and garlic powder.
  4. Bake tomatoes and zucchini (cut side down) for 15 minutes or until tender.
  5. After baked, top each zucchini half with 2 tlbs of hummus, feta cheese, pesto, and the tomatoes. Bake again for 15 minutes until begins to bubble.
